-Choose a good quality potatoes of a medium/big sice
-Wash up the potatoes, cut in thin slides , and put them in a pan, plenty of olive oil. Note that all the potato slices must covered by the oil.
-Put the pan covered over medium heat
-Whe have to poach the potato, and we will reach it by uncovering and stirring from time to time without sticking to the bottom of the pan, mind that we have to got the potato well poached without getting burned.
– Using a plate or bowl, shell and beat the eggs without exceeding.
-Once the potatoes are poached, we will drain them and crush them with a fork slowly.
-Mix the potato with the beaten egg and let it rest for 15 minutes.
-Once rested we will throw it in a pan with a few drops of oil over low heat and wait to see the ends with consistency to turn it around.
-Once we have turned it around we continue with the slow fire waiting for it to set, to make it more juicy or less we will play with the power of the fire in this final phase.
